Optimized Your Heated Cabinet Performance
Introduction
Preserve hot food quality with Cotherm capillary control for heated cabinet. Cotherm GTL thermostats help manufacturers deliver reliable food holding and proofing performance while improving energy efficiency and equipment durability.

What is a Heated Cabinet?
A heated cabinet is designed to keeps food warm, fresh, and safe until people are ready to eat without cooking it further. It is commonly used in commercial kitchens, catering operations, institutional kitchens, buffet service environments and food transportation. Heated cabinets can also be used for dough proofing in bakeries when equipped with both temperature and humidity control systems.
In food service environments, heated cabinets maintain prepared food at safe serving temperatures while preserving its quality. They continuously monitor and regulate internal temperature and humidity levels to keep food out of the bacterial “danger zone” without overcooking it. Typical holding temperatures range from 60°C (140°F) to 94°C (200°F), helping preserve texture, flavor, and moisture.

Inside heated cabinet, heat are distributed evenly through forced air circulation, ensuring a consistent temperature on every shelf and in every corner.
Proofing Cabinet
On the other hand, heated cabinet can be use for dough proofing. This is an option of the heated cabinet which is equipped with a small humidity generator that is made of a small open container for water, a heating element and a dedicated thermostat. Heated cabinets provide a controlled environment that promotes fermentation. Typical proofing temperatures range from 27°C (80°F) to 49°C (120°F), with relative humidity levels between 75% and 85%, depending on the type of dough and yeast used. This application is common in bakeries and industrial bread production facilities. As heated cabinets are also frequently used for food transportation, electrical wiring and component assemblies must be designed to withstand vibration and mechanical stress

What are the Challenges most manufacturer faces?
Heated cabinets must maintain a stable thermal environment to ensure food safety and product quality. Temperature fluctuations can cause food to enter unsafe temperature ranges, dry out, or deteriorate.
Moreover, in commercial kitchens other additional challenges present such as frequent door openings, high humidity, grease, and demanding operating conditions. To compensate for these disturbances, thermostats must provide accurate temperature sensing and fast response times without excessive overshoot.
At Cotherm we understand that manufacturers therefore require temperature control solutions that are reliable, durable, and capable of maintaining consistent performance to cope with this harsh environments.
We give solution with GTLs
With Cotherm GTL bulb-and-capillary thermostats, we deliver temperature control solutions tailored to the specific needs of your heated cabinet applications.
Designed for precision, reliability, and safety, our mechanical thermostats help maintain stable heating conditions where consistency matters most. In food service environments, accurate temperature control is not only a technical requirement, but a key factor in preserving food quality and protecting customer experience.
Keeping food at the right temperature helps reduce safety risks, prevent quality loss, and maintain taste, texture, and freshness over time. By ensuring reliable temperature regulation, Cotherm GTL thermostats support safer operations, better product consistency, and greater customer satisfaction.
Most heated cabinets incorporate two thermostats:
- One thermostat regulates temperature.
- A second thermostat controls humidity.
Together, they provide optimal environmental control while helping prevent overheating.
GTL thermostats feature welded Faston terminals and screw connections that ensure reliable electrical continuity, even under vibration conditions associated with transportation.
At Cotherm, GTL thermostats are engineered to deliver long-term accuracy and stability, even in demanding professional kitchen environments.
A high‑quality thermostat helps:
- Reduce unnecessary heating cycles,
- Optimize energy consumption,
- Extend the lifespan of the heating system.
